  • 2 (6 ounce) cans tuna, drained
  • 2 large potatoes, peeled boiled and mashed
  • 12 cup diced onion
  • 2 eggs
  • 2 teaspoons pickle relish
  • 12 lemon, juice of
  • 34 cup cracker crumb

directions

  • Preheat oven to 375.
  • Mix all ingredients but the cracker crumbs.
  • Shape the mix into 6 patties, and put in freezer 10 minutes.
  • Take out; coat with cracker crumbs.
  • Spray a cookie sheet with Pam.
  • Put the patties on the cookie sheet.
  • Bake 40 minutes.
  • Turn over at the 20 minute point.
  • Serve on buns with lettuce, tomato, and low-fat 1000 island dressing.

  2. My husband and I both loved this recipe. I served it on whole wheat buns with tomato and lettuce and tarter sauce.

Still in West Virginia but we've moved a few miles away, down to the county capitol. It's a compromise: bigger than our last town but smalelr than the "big city" of Cumberland MD, right up the road. Jobs are not that plentiful here so I am fortunate to be able to work at home (I'm a writer). My passion is cooking and feeding people family well....my pet peeve is the family court systems in America......my love is for emergency medicine and the people that make survival in a crisis possible
