Great easy appetizer that I had at our annual Halloween Party...Putting recipe here for safe keeping as I want to make it for Thanksgiving....very elegant, and tastes wonderful.
- 20 cherry tomatoes, halved (cherry or grape size)
- 20 basil leaves
- 20 bite-size fresh mozzarella cheese balls (often labeled bocconcini)
- salt and pepper
- 1⁄2 cup balsamic vinegar
- 1⁄4 cup extra virgin olive oil
- 20 toothpicks
- Usining a toothpick, spear a half of a tomato, a piece of basil, a mozzarella ball, and another half of a tomato. Repeat with remaining ingredients. Place on a service dish and sprinkle with salt and pepper. Mix the vinegar and oil together in a small bowl to serve as a dipping sauce, or you can marinate appetizers in a bowl with marinade poured over.
Could not be easier. I took to our Church's 50th anniversary. All gone before I even got in line. Obviously great!
this was thoroughly enjoyed for Super Bowl Sunday, the only change I made was I doubled the recipe and I should have tripled, it went so fast! thanks for this great recipe Clndytc, I look forward to making this again!
