This salad is low GI and protein rich. Make a big one and keep adding goodies to eat as a main dish! This recipe is for the side dish version that my family enjoys.
- 6 cups lettuce, torn into bite sized pieces
- 1⁄2 red bell pepper, chopped
- 1 medium cucumber, sliced
- 1⁄3 cup walnuts, chopped
- 1⁄4 cup pumpkin seeds
- 1 medium apple, chopped
- 1⁄2 cup chickpeas, canned is fine, rinsed and drained
- Combine all ingredients in a large salad bowl.
- Toss and serve.
