- De-rind the bacon. Fry it in a little oil in a frying pan over a moderate heat until crisp.
- Peel the avocado pear and slice it, removing the stone. Grate or slice the cheese.
- Cut the French bread in half lengthways, and spread with the butter. Arrange layers of the avocado and bacon on the bread. Top with the cheese slices or grated cheese.
- Grill under a hot grill for a few minutes, until the cheese is golden, bubbling and melted. Eat at once.
