Pineapple Mint Freeze

"My mother-in law makes this for my husband when he comes home, for his special dessert. He likes it straight from the freezer- I like to let it thaw a bit. And I must admit- instead of the whipping cream and sugar, I use 1/2 container of Cool Whip."

  • Drain pineapple, reserving syrup.
  • In saucepan, soften gelatin in the reserved syrup.
  • Add jelly; heat and stir until gelatin is dissolved and jelly is melted.
  • Stir in pineapple.
  • Chill until mixture is thickened and syrupy.
  • Whip cream with sugar and fold into thickened gelatin mixture.
  • Tint with a few drops green food coloring, if desired.
  • Spoon into a loaf pan/dish.
  • Freeze overnight.
  • Let stand at room temperature 10-15 minutes and unmold.
  • Slice and place on lettuce lined salad plates.

<p>I am a mother of 17yr-15yr-12yr old children. I work 3 days a week outside of the home as a pharmacist. Dinner is always a sore subject for me, because there is never time to make it, and the kids don't eat it anyway. My goal this year is to just forget the kids and make what I think my husband and I want, and then they'll have to try new foods out of desperation! <br />I've noticed that I tend to give 4 stars as my top score when reviewing a recipe. Am I waiting for that once in a lifetime, mind altering taste? Or am I just too picky? Oh well.....</p>
