"A cake to use up override pears."

ingredients

• 4 pears, overripe peeled and chopped
• 1⁄4 cup coconut flour
• 1⁄4 cup tapioca starch
• 1⁄4 teaspoon salt
• 1⁄2 cup brown sugar
• 1 teaspoon baking powder
• 3 eggs
• 1 teaspoon cinnamon
• 1 teaspoon vanilla

directions

1. Mix together all dry ingredients.
2. Add pears and stir.
3. Fold in eggs until evenly mixed.
4. Bake at 350 for 30-40 minutes until skewer comes out clean.
