A super simple salad/side dish that works well with a hot dish, such as one with chilies, because it's cooool. I actually add the vinegar pretty much by eye without measuring. I don't add salt, but feel free to do so. It's great if you can let it sit a bit before serving so the flavors have a chance to meld, but it also works as a side dish to throw together at the last minute.
- 1 medium cucumber, peeled and sliced
- 1 large peach, peeled, pitted and sliced
- 1⁄4 cup cider vinegar
- 1⁄2 teaspoon sugar
- 1⁄4-1⁄2 teaspoon fresh ground pepper
- Combine peach and cucumber slices in a bowl.
- Mix together the vinegar through pepper and toss with the peach and cucumber.
This was cool and refreshing and work as the perfect side to some spicy vegetarian burgers. I added 2 slices of paper thin shaved red onions which for me helped to bring the nectarines (I don't like peach fuzz) and cucumbers together. Next time, I want to try this with a combination of white balsamic and cider vinegar to make the dressing a touch more acidic. And yes, the second helpings were better than the first so do let it sit for 30 minutes or so if you have time. Two of us here and we ate the whole thing so if you really are serving four then double the recipe. Thanks echo echo. P.S. I used Splenda to keep this WW Core.
I used frozen peaches, it was great!
The cider vinegar had a little too much zing for my taste. I was disappointed because I was really looking forward to trying this. Maybe if the amount of vinegar was cut done it wouldn't be so over-powering.
