Pamela's Gluten-Free Brownies

"This was the first thing I ever made with Pamela's Baking & Pancake Mix. This recipe was taken from Pamela's website. However, it is no longer there and I thought I'd post it - mainly for me because I have a tendency to lose recipes!!!"

Questions & Replies

  1. I love your baking mixes and only have a hand mixer for your sprouted bread recipe, what is a better mixer?

  2. What do others use as a good substitute for butter in the brownie recipe. I used ghee and it was pretty dry batter. I don't want artificial margarines or such. And I used erythritol and it was fine in the brownies?

Reviews

  1. I was pleasantly surprised at these! I used Arrowhead Mills GF all purpose baking mix instead of Pamelas (that's what I had here) and did everything else the same, using nuts.

  2. Awesome brownies! I used my own gluten-free flour blend and they came out perfect. Wonderfully fudgy!

  3. These taste just like regular brownies. 25 minutes in a metal pan, 30 in a pyrex square. Perfect.

  4. Pamela's is my best friend for baking, but I hadn't found a "scratch" brownie recipe yet...this recipe is PERFECT! My 11 yr old daughter made these by herself for her brother, who has celiac disease and they were fantastic! Of course, she took some creative license & used 2/3 c. chopped pecans instead of just 1/2 c., and mixed that with 2/3 c. butterscotch chips & 2/3 c. chocolate chips. Absolutely decadent with a scoop of ice cream on top. Our new favorite!!

  5. I can't wait to make this recipe! I also tried a boxed Betty Crocker mix and found it to be gritty and unappealing. This recipe sounds much better. I can't wait to try it and add my special Paula Deen secret in the middle...Hershey's candy bars! Makes a great, gooey center. But don't forget to warm them up before you eat them or the candy bar gets hard. But this recipe sounds great!! Finally, gluten-free baking!
