Orange Sherried Sweet Potatoes

This goes very well with poultry or ham. The sherry can be substituted with ginger, maple syrup orcrushed pineapple if desired.

  1. Cook potatoes in boiling water until tender, about 30 to 40 minutes.
  2. Drain, cool slightly and peel.
  3. While still warm mash with butter, orange rind, orange juice, sherry, sugar, nutmeg, salt and pepper.
  4. Return to saucepan and heat over medium heat until hot.

This was very good next time I will not put so much orange juice the orange taste was a little strong.
