Orange Bran Flax Muffins

  • Preheat the oven to 375°F.
  • Line two 12-cup muffin pans with paper liners, or coat with cooking spray.
  • In a large bowl, combine oat bran, flour, flax seed, wheat bran, baking powder and salt; set aside.
  • In a blender of food processor, combine oranges, brown sugar, buttermilk, oil, eggs, and baking soda. Blend well.
  • Pour orange mixture into dry ingredients.
  • Mix until well blended.
  • Stir in raisins.
  • Divide batter evenly among muffin cups.
  • Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean.
  • Cool in pans for 5 minutes before removing to a cooling rack.

  1. I made them low-sugar but substituting Baking Splenda for the brown sugar. Also, I couldn't find Wheat Bran so I used Wheat Germ and they still turned out fantastic!
     
  2. I have been making these muffins just as the recipe states for over a year and they are wonderful! Moist, orangey, freeze well if you can save any back! They are always well recieved, even by those not so health-conscious. If you do not have a food processor, use a blender, half the ingredients at a time and it works fine. I was intending to post this, but glad you have done it. Thanks!!
     
  3. What an unusual recipe. I was expecting them to taste bitter due to the orange pith and peel but no way! These muffins are great! I made a couple changes to the recipe. I didn't have oat bran so I ground up steel cut oat and substituted frozen blueberries for the raisins. The orange tastes so fresh and sweetness level was just perfect for us. Totally hubby approved! I used organic oranges for this recipe. Thanks for sharing. : )

  5. I halved the recipe. It is very tasty, not too sweet. I feel good eating it.

  1. Very good recipe. I used grapefruit instead of the oranges making sure to strain the skin through a colander so as to avoid bitterness.I also added a bit more oil. Wonderful with the golden raisins. I have a hot oven so my temp ran at about 325,time at 25- 30 min. the only draw back is that is just a bit time consuming compared to other muffin recepies, but the taste and healthfulness of the finished product is well worth it.
