Oatmeal Chocolate Fudge Bars

Dough
- 177.44 ml butter
- 236.59 ml light brown sugar, firmly packed
- 2.46 ml salt
- 354.88 ml all-purpose flour
- 236.59 ml quick-cooking oatmeal (your preference for texture) or 236.59 ml old fashioned oats (your preference for texture)

- 396.89 g can sweetened condensed milk
- 236.59 ml semi-sweet chocolate chips
directions
- Preheat oven to 350°.
- Cream butter, sugar and salt in a mixer.
- Add flour and oatmeal, blend until it holds together.
- Heat milk in a pan and add chocolate chips.
- Use low heat and stir until the chips are melted and you have a smooth chocolate cream.
- Using a 9x13 pan, press 3/4 of the dough mixture in the pan, spreading and patting it to cover the whole surface.
- Pour chocolate cream over crust.
- Crumble last bit of dough over the chocolate, creating a third spotty layer.
- Bake for 30 minutes, until lightly browned.
- Cool, cut, transfer to a wax paper lined tray and allow to firm up a bit before serving- I leave them for a few hours and they become fudge-like, but they are still yummy if you eat them sooner than that.
- You can also use a smaller pan- I have used a 10" square and just baked a little longer for a thicker bar, which required a longer cooling time as well.
- Note: removing to the wax paper is necessary-- if you cool them too long in the pan they are hard to remove, as the bottom crust tends to stick to the pan.

What a simple, delicious dessert. I followed the recipe exactly, using old-fashioned oats. I was surprised that these weren't as overwhelmingly 'chocolatey' as I expected, but the buttery-oatmeal crust is delicious. I think next time I'd cut back the flour a bit and up the oats a bit - b/c I love the oatmeal. And I think I'd sprinkle some pecans on top with the crumble. I'll definitely make these again -- ingredients I always have on hand, and super easy!

These are really, REALLY good! Julie warned me not to be alone in the house with these, but I was practically beating the rest of the family away from them. I also took her suggestion and made them in a 9 inch square dish which made for a thicker bar. A crumbly oatmeal base and topping held together with rich gooey chocolate, I liked them equally well warm and cooled. Very easy, uses standard pantry ingredients and popular with the kids. Thanks, Julie, we'll be making these often!

Such a quick and easy to put together treat! I was craving chocolate and whipped this together in a few minutes. These are delicious both warm and cooled, though I think they are excellent when chilled. I sprayed the pan before cooking and had no problems with sticking. Thanks for sharing this recipe Julie, I'll be sure to use it many more times in the future. :)
