- 1⁄4 cup olive oil
- 2 medium sweet onions, finely chopped
- 1 cup green lentil
- 1⁄2 cup brown basmati rice
- 2 cups water
- 1 teaspoon salt
directions
- Saute onion in oil until caramelized (about 50 minutes).
- While onions are cooking place lentils in saucepan and cover with water by an inch. Bring to boil over medium heat. Reduce to a simmer and cook for 20 minutes. Drain lentils and set aside.
- When onions are ready stir in rice, lentils, salt and 2 cups water. Bring to a boil, cover and reduce heat to a simmer.
- Simmer for 40 minutes or until rice is tender.

A coworker sent me the original posting of this and I've had it in my "to cook" pile for a while. I should not have waited! Oh my goodness! So so so good! The key is definitely caramelizing the onions. It took me about 50 minutes, like you said, on medium-ish heat. The smell is incredible. And it was pretty easy to make even with the long amount of time. I think next time, though, I'll thinly slice the onion instead of finely chopping. I would love to see them in the dish more. Considering that all this has is salt as a seasoning, it tastes so "meaty" and robust.
