  1. My husband loves a salad with dinner and I always make something up with lettuce and the usual vegetables. I decided to try this for a change. We really enjoyed it. I also took some along when my family got together for a picnic and it went over well. I had to make copies of the recipe for a couple of members of my family (they don't have a computer). This makes a lot of salad and my husband also took a small container for lunch several days. Will definitely make this again.....
     
  2. Many thanks to Mysterygirl for sharing this great recipe. This has become one of my favorite salad recipes. I have taken it to several potlucks and always get lots of compliments on it. Since I am on Weight Watchers, I lightened it up even more by using the Fat-Free Zesty Italian Dressing.
     
  3. This is the same recipe my mom's been making since the dawn of time! I love this recipe, even as a kid it was a favourite of mine. My mom (and so I do it too) adds a jar of marinated artichoke hearts to it every so often, as well as carrots and sometimes even brussels sprouts! I like that it can be made no matter what vegetables you have on hand, I haven't tried one that I didn't like yet.
     
  4. What a great idea. Very easy to make - although lots of chopping. It is nice that you can make a fresh veggie salad ahead of time. It was also very yummy. I personally am not a red pepper fan so I didn't add as much of those. It does make A LOT.
     
  5. This was ridiculously good. The marinade softened the vegetables, including the broccoli and cauliflower. Generally, I can't stand broccoli and cauliflower, but I liked them this way. We'll definitely make this again. I'm thinking I may make a giant batch of this each weekend to use throughout the week. Maybe we'll get closer to the USDA recommended SIX CUPS of vegetables each day that way! LOL My only complaint is that it is somewhat time-consuming because there is so much chopping involved, but that comes with the territory.
