Leah's Pesto Salad Dressing

"This is a salad dressing that I absolutely Love. I have a few live basil plants (now the size of 'bushes' I suppose) and am always looking for ways to use it. I am eating some right now during my lunch break...it's a way to incorporate that lovely pesto flavor into your simple bibb lettuce salads."

  • Place all ingredients in food processor, making sure to at least peel the paper off of the garlic cloves.
  • Pulse to desired consistency, tasting as you go, adding ingredients to taste.
  • All amounts except basil leaves are guesstimates, as I make this almost every morning to go on my lunchtime salad.
  • I have used peanuts, pecans, hickory nuts, and the classic pine nuts. It's all good. Whatever you have on hand will work just fine. I like it to have a distinguishable zing, those with less tolerable palates may want to just use one garlic clove.
