"I developed this recipe when I was tired and wanted something very quick for my family. It takes less than 30 minutes to make and impresses everyone that has it."

directions

  • Place the stuffing mix in a gallon freezer bag and pound with a small pot or mallet to a fairly fine consistency. This could also be done in a food processor. Place the fine stuffing in a bowl.
  • Pour the olive oil in the other bowl.
  • Butterfly each breast and place a slice of Jarlsberg cheese, cut to fit inside the chicken, in the middle.
  • Dredge the breast in the olive oil, then place it in the stuffing mix and coat very well.
  • Place the breast in a large skillet with the vegetable oil at medium high heat and cook for approximately 5 minutes per side or until golden brown.

  1. This chicken is simple & delicious! Like Fluffster, I also used Haverti cheese in place of Jarlsberg and it tasted wonderful! I loved the idea of coating the chicken breasts with cornbread stuffing! I used our blender to smooth the cornbread stuffing and coated each chicken breast with a good thick layer of the crumbs before putting them in the skillet. I boiled some potatoes and we ate the chicken with mashed potatoes & gravy and a caesar salad. Excellent recipe! Thanks so much!

  2. This is a very easy to make recipe, and it turned out delicious. This is a great recipe to go to when time is a factor. I didn't have any Jarlsberg cheese, so I used what I had, Havarti, and it was delicious as well. Great recipe, great idea! Thanks for posting Duroc!
