Jalapeno Cornbread

• 1 cup all-purpose flour
• 1 1⁄2 tablespoons sugar
• 2 1⁄2 teaspoons baking powder
• 1⁄2 teaspoon baking soda
• 1⁄2 teaspoon salt
• 1 cup yellow cornmeal
• 2 eggs, beaten
• 1 1⁄2 cups buttermilk
• 4 tablespoons butter, meted plus
• 1 teaspoon butter, to grease the pan
• 1 tablespoon finely chopped pickled jalapeno chile

directions

1. Preheat oven to 425 degrees.
2. Grease a 9-inch square baking pan with butter.
3. In a large bowl, stir together dry ingredients with a wire whisk or fork.
4. In a medium bowl, whisk together eggs, buttermilk, butter and jalapeno chile.
5. Add to cornmeal mixture and stir until just blended.
6. Pour into pan and bake 20 minutes or until edges are golden and a toothpick inserted into the center comes out clean.

This recipe is very good! The cornbread rises well and has good texture although I would hope for it to be more fluffy. The jalapeno flavor is mild so for those loving pepper flavor, they should increase the amount. Thank you.

terrific recipe - I doubled this for a work function, and received good comments. the buttermilk provides a nice texture - but i too found the amount of jalapenos too low. I had no fresh peppers, so i added 1 (4 oz) can of jalapenos and 1 (4 oz) can of regular chopped green chilis into a food processor, then into the recipe. The result was aromatic and fluffy - very nice!

Pretty tasty, but a little bit dry. I couldn't really taste the jalapeno.

Delicious! This is the first time I've ever made or eaten cornbread. I omitted the eggs and added a little extra butter and some aerated soda, which makes it rise well and be soft. I also used fresh jalapenos. I wasn't sure if cornbread was supposed to be how my turned out but then I learnt that it was so recipe had been a success. Thanks.

Great pan of cornbread!The cornbread raises well and is fluffy not crumbly.My family didn't even know they were eating buttermilk as you can't tell!I used fresh jalepenos out of the garden instead of pickled.I also sprayed glass baking dish with Mazola spray in can instead of butter.
