I'm in the process of trying to duplicate a lime herb dressing at a local joint called Avante Cafe. This isn't it, but it's good!
- 1⁄4 cup fresh lime juice
- 1⁄2 cup extra virgin olive oil
- 2 tablespoons chopped cilantro
- 1⁄2 teaspoon dried basil
- 1⁄2 teaspoon dried dill weed
- 1⁄2 teaspoon salt
- Blend all ingredients well in a blender or food processor. Drizzle on salad -- EAT!
I didn't use this as a salad dressing but as a marinade for chicken breats, and they came out very flavorful.
