Hearty Chicken Bake

"I got this from a favorite brand names recipe site and have been making it about once a month. My family loves it and usually so does everyone else I make it for. It is definitely a comfort food! I switch the veggies sometimes as well so it seems like a new dish. Very good."

  • 3 cups mashed potatoes
  • 1 cup shredded cheddar cheese, divided
  • 1 13 cups French's French fried onions, divided (sometimes, I use the cheese flavored ones)
  • 1 12 cups cubed cooked chicken
  • 1 (10 ounce) package frozen mixed vegetables, thawed and drained (sometimes I cook broccoli and use that instead, 1 1/4 )
  • 1 (10 3/4 ounce) can cream of chicken and mushroom soup (if you can't find that, use regular cream of chicken soup)
  • 14 cup milk
  • 12 teaspoon ground mustard
  • 14 teaspoon garlic powder
  • pepper

directions

  • Preheat oven to 375.
  • In medium bowl, combine mashed potatoes, 1/2 c cheese and 2/3 french fried onions.
  • Mix thoroughly.
  • Spoon potato mixture into greased 2 Qr. casserole.
  • Using back of spoon, spread potatoes across bottom and up sided of dish to form a shell.
  • In large bowl, combine chicken, veggies, soup, milk and seasonings.
  • Pour into potato shell.
  • Bake uncovered 30 minutes or until heated through and bubbly.
  • Top with remaining 1/2 c cheese and 2/3 c french fried onions.
  • Bake uncovered 3 minutes longer or until onions are golden brown and cheese is melted.
  • Let stand 5 minutes before serving.

  1. WOW! To be honest with you the only reason I chose this recipe is because my cabinets were nearly bare and this is the only recipe I could find that used the ingrediants I had on hand. The fried onion and cheese mashed potatoes is what set it off! I did not have mixed veggies so I used just corn instead but it still came out great. Not something I would serve at a formal dinner or anything but def a wonderful comfort food! **** I also wanted to add that this is only 7 points if you are on the WW diet. Not too high for a one dish meal!

I am married, have three children and two grandchildren. My youngest "oops" baby is just turning 17 and is going to be a senior in high school in the fall.. I love to cook and collect recipes. I get a lot of my good recipes from church potlucks. Since I am now retired and a stay at home mom, I have time to search the RecipeZaar site and try a lot of the recipes. We love living on the coast and would never move back inland!
