These are by far my favorite "cookie". Rich, chewy, and will ALWAYS remind me of her.
- 236.59 ml unsalted butter
- 236.59 ml brown sugar
- 226.79 g packagechopped dates
- 1 egg, slightly beaten
- 709.77 ml Rice Krispies
- 236.59 ml coconut
- 59.14 ml chopped maraschino cherry
- 4.92 ml good vanilla
- powdered sugar
- In heavy-bottomed,lg.
- saucepan or pot,melt butter.
- Stir in brown sugar and dates.
- Cook til sugar is melted.
- Remove from heat and QUICKLY stir in egg well.
- Return to med.
- heat, stirring constantly, til boiling.
- Boil and stir 1 minute.
- Remove from heat, stir in rest of ingredients, and let cool off til easily handled.
- Roll into balls, about 1" or so, roll in powdered sugar to coat.
- Store airtight.
- (Can chill if desired, but serve room temp.).
I just recommended these on a forum asking for ideal edible gifts for the holidays. I use an almost identical recipe, but have not added cherries before---nice idea for color! And the other reviewer is right---even "date haters" love these!
Rich and wonderful flavor! I think I would reduce the butter by 1/4 cup next time, but these date balls were so good and very addictive! Thank you, Wildflour! Christmas 2009: I used 3/4 cup butter and 1/4 cup sugar (because I was using fresh California dates which I find to be very sweet). Still great to my taste! This is a very popular cookie, and the cook appreciates any no-bake cookie she can get! Thanks again for sharing your grandmother's recipe.
I made these for work and one of my coworkers was enjoying them, eating them almost like M&Ms. She asked what all was in them (while consuming #3 or 8) I mentioned dates and she stops in her tracks and screams "but I don't like DATES!!" I simply said well you do now. :o) And she continued eating them. LOL Thanks for sharing. Connie
