ingredients
- 1 cup softened butter
- 3⁄4 cup firmly packed dark brown sugar
- 1⁄2 cup granulated sugar
- 2 large eggs
- 1 tablespoon vanilla
- 1 1⁄2 teaspoons baking powder
- 2 - 2 1⁄2 cups all-purpose flour
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 cup crushed toffee pieces, candy (such as Heath, Skor, etc.)
- 1 1⁄2 cups shredded coconut
- 1 1⁄2 cups semi-sweet chocolate chips
- 1 cup chopped pecans, toasted
directions
- Cream butter until fluffy.
- Add the sugars slowly and beat well.
- Add the eggs and vanilla and beat well.
- On a sheet of waxed paper thoroughly combine the flour, baking powder, soda, and salt.
- Add to the butter mix, stirring just until blended.
- Stir in toffee bits, coconut, chips, and pecans.
- Drop the dough by tablespoons onto ungreased cookie sheets.
- Bake 10-12 minutes in a preheated 350 degree oven until lightly brown around the edges.
- Let them cool on the sheets a bit before removing to wire racks.

Don't be fooled by these cookies! When I first tried them straight out of the oven I wasn't all that impressed, I mean they were good but not "great". But surprisingly by the next day after they had cooled and sat for awhile they were much better. A good spin on just a regular old chocolate chip cookie if you like coconut, pecans and toffee. My 11 month old son thought they were fabulous! I would make these again and they baked up very nicely. Good recipe! Thanks for sharing:-)

I live in Minnesota, and actually like the winter more than summer! (Must have Siberian ancestors!)
The main focus of my life is, and always has been, children. I've spent the majority of my life either educating myself about children, having and raising children, or working with children. I presently work in an elementary school with children that have emotional/behavioral difficulties, and have three daughters of my own.
I also have four grandsons (one an extra gift that came when my daughter very wisely married his dad) and will become Grandma to the the 5th baby in June. This one a little girl! I can not wait!! I received so much joy being a mother that finding that much joy, and more, in being 'Grandma' has taken me by surprise. They are all the best gifts ever given to me.
Whatever free time I have is spent with my nose in a book, surfing the web for new recipes, or with my wonderful friends, both online and "in person".
