Easy Quick Homemade Bread and Biscuits

I usually make bread in the bread machine. One night, when I didn't have time for the bread machine, I used my kitchen aid mixer recipe book and modified their recipe for 60-minute rolls. The result --homemade bread and biscuits in less than 60 minutes!

  1. Heat milk, sugar, salt, and butter substitute in small saucepan until butter melts and sugar dissolves.
  2. Cool to lukewarm.
  3. Dissolve yeast in warm water in warmed mixer bowl.
  4. Add milk mixture and slowly add flour.
  5. Mix for 1-2 minutes on speed 2.
  6. Place in greased bowl, turning to grease top.
  7. Cover and let rise next to warm oven for 10 minutes.
  8. Put dough in greased loaf pan and leftover dough in greased muffin pans.
  9. Let both pans rise in oven (170 degrees) for 10 minutes.
  10. Bake at 425 degrees (12 minutes for biscuits and 25-30 minutes for bread).

I used butter (there is nothing like the real thing), honey instead of sugar and added about 1/4 c. potato flakes to the yeast mixture to encourage the yeast to do its job. In addition, I am trying to switch to whole wheat flour and used 2 C. all purpose flour and about 2 1/2 C. whole wheat flour. Yummy bread! I will keep this recipe for years to come at my fingertips.

I wanted a quick recipe for bread, so I used this one but modified it to what I was looking for and it turned out great. I've never even made bread before (besides pizza dough). I substituted 4 1/2 C whole wheat flour & 1/2 cup flax seed meal for the all-purpose flour, real butter, low fat milk (it's what I had) and honey and molasses for the sugar. It came out perfect, just like something in a fancy restaurant and was especially delish warm with butter. I'm thrilled! Thanks!

WOW!!!!!!! I made bread! :) Well, I found it to be rather difficult, but that's because I had to borrow flour and try to figure out if my yeast would convert. This is beautiful bread and made plenty for tomorrow!
