Two easy steps to an elegant dessert.

Directions

  1. Melt marshmallows in creme de menthe in top of double boiler. Cool thoroughly. Fold in whipped cream.
  2. Pour into mold or freezing tray and freeze about 3 hours with temperature at lowest setting. When firm, return controls to normal temperature and let ripen until time to serve. Unmold and serve with fresh strawberries or chocolate shavings.

I made my own creme de menthe using creme de menthe syrup and vodka. As first I thought the mint would be strong but it seems to mellow a bit with freezing. LOVELY elegant adult dessert. I garnished it with grated chocolate. Another great thing is it is a dessert where a small serving is satisfying Made for Beverage Tag 2009

I made this recipe for our St. Patrick's Day Eastern Star meeting, as one of two desserts. I found it small in quantity so I doubled it and still found it was too little in the bowl for the 38 people I had for my meeting. Next time I will also cut back a bit on the Creme de Menthe, it was a bit overpowering; but still a nice taste. I will give you 4 stars for your recipe. Thanks for sharing it with us for St. Paddy's Day.
