Crab Meat Omelette Filling

Another favorite of ours from The Plantation Cookbook. Prepare your basic three egg omelette and use this delicious crabmeat filling. Fabulous!

  1. Saute green onions and 1 tsp parsley in butter until soft, being careful not to let butter brown.
  2. Add crabmeat, tossing lightly so as not to break up lumps.
  3. Season to taste and add lemon juice.
  4. Prepare basic omelette.
  5. When eggs begin to set, add crabmeat mixture and turn down heat.
  6. When omelette is set, fold two sides toward center, over filling.
  7. Garnish with the remaining parsley.
