  • 1 -2 lb ground beef (cooked and drained)
  • 1 ounce taco seasoning
  • 15 ounces sweet corn
  • 15 ounces black beans
  • 10 ounces rotel
  • 2 cups shredded cheddar cheese
  • 2 (8 1/2 ounce) boxes Jiffy cornbread mix (prepared but not cooked)
  • 2 eggs (for corn bread mix)
  • 23 cup milk (for corn bread mix)

directions

  • Pre-heat oven to 400 degrees.
  • Brown the ground beef.
  • mix corn bread mix, eggs, and milk while the ground beef is cooking.
  • drain ground beef.
  • return to heat ground beef, taco seasoning, corn, black beans, and Rotel.
  • Once, beef mixture is heated through, pour into baking dish.
  • Sprinkle on a layer of shredded cheese.
  • pour corn bread mixture on top and spread around evenly.
  • Bake for 20 minutes.

  1. Very good recipe. I used Trader Joes corn medley and added a little fresh sweet bell pepper , but it was great.
