Broiled Basil Eggplant

"Eggplant that isn't breaded and fried! The cooking time for this recipe is for a large eggplant....if you use the smaller japanese style eggplant, reduce the broiling time."

  • Combine the first six ingredients in a small bowl, beating with a wire whisk until blended. Set aside.
  • Brush both sides of eggplant slices with the 3 tbsp olive oil. Arrange eggplant slices in a single layer ona n ungreased baking sheet. Sprinkle with 1/4 tsp salt and 1/4 tsp pepper. Broil 5 1/2 inches from heat (with electric oven door partially opened) for 5 minutes on each side or until tender and lightly browned. (Smaller eggplants will need less time).
  • Arrange eggplant slices on an ovenproof platter or casserole dish, overlapping slices slightly. Arange cheese slices over the eggplant slices. Broil for 1 minute or until cheese melts.
  • Whisk the reserved olive oil mixture until blended. Spoon over the eggplant. Garnish with fresh basil sprigs if desired.

  1. Made this recipe last night as a side to Recipe #455716. We frequently have broiled eggplant with olive oil, salt and pepper, but this recipe was a real treat. I absolutely LOVED the fresh herb olive oil that was brushed on at the end. It was very flavorful. Thanks for this keeper.   2. What a wonderful way to prepare eggplant with a nice presentation. Made as written cutting down by using a slightly smaller eggplant as there was just two of us. Also used grated mozzarella instead of sliced due to that is what I had on hand. DH loved the drizzle of herded oil over the top. I liked that there was lots of flavor with no frying or breading. Will make again. Thanks so much for the post.
     
  3. I may have cut back a little on the cheese because the star of this was the lemon and herbs! Like candy!
     
  4. An easy dish. I made it a bit softer than called for. Also I would reduce the quantity of oil. Like the ease of making it.
