Harvest Moon Smoothie

"About the time my toddler started cutting molars, he gave up baby food. So it's been a struggle to figure out what he'll eat (besides breastmilk.) My 14yo step-son had a 1-day health-improvement kick, wherein he discovered that he didn't like V-8. But the toddler likes V-8. Hurray! And he likes smoothies. So this creation is for him."

  • 1 sweet potato, peeled, chopped, and boiled (reserve the boiling water)
  • 1 banana, ripe
  • 1 apple, peeled, cored, and chopped
  • 18 teaspoon cinnamon
  • 1 cup water (from the boiling sweet potato)

  • Prepare the sweet potato and put it and its boiling-water in the refrigerator to cool. (If you don't have time for this, use tap water and some crushed ice to cool down the smoothie.).
  • Put everything in the blender and puree.

  1. this was tasty, filling, and healthy. i used some frozen bananas to make the smoothie cold, and put the potatoes in the fridge for a while first. i dont know if it was supposed to be cold, but it was good cold.
     
  2. Any way I can get vegies into toddler DDF and I'm all over it so gave this a go. It was too thick to start so I added a splash of milk and a dash of vanilla yoghurt as well. This is a very mild tasting smoothie that both toddler DD and I enjoyed. Made for ZWT 4
     
  3. This sounded so delicious and healthy, I had to try it! Somehow, maybe my sweet potato was too big, but it was all I could taste, even with extra cinnamon and some ground flax on top. Still, it was nice and mild and very filling (I halved it and ate the whole thing for breakfast- I'm quite a hog when it comes to smoothies LOL). Thanks mliss29!
