Warm Dressing for Spinach

- 1 1⁄2 cups sugar
- 1⁄2 cup all-purpose flour
- 3⁄4 teaspoon salt
- 4 cups cold water
- 1 cup cider vinegar
- 4 eggs, lightly beaten
directions
- In large saucepan, combine sugar, flour and salt.
- Gradually stir in water and vinegar.
- Cook and stir over medium-high heat until thickened and bubbly.
- Reduce heat;.
- Cook and stir 2 minutes longer.
- Remove from heat.
- Stir small amount of hot dressing into eggs; return all to the pan, stirring constantly.
- Bring to a gentle boil; cook and stir 2 minutes longer.
- Remove from heat.
- Serve immediately over spinach salad that you might want to have mushroom and croutons inches.
- Sprinkle top with cooked and crumbled bacon.
