  • 2 egg yolks
  • 1 12 cups water
  • 12 cup cider vinegar
  • 1 tablespoon melted butter
  • 1 14 cups sugar
  • 13 cup flour
  • 12 teaspoon lemon extract
  • 1 baked pie shell, cooled

directions

  • In saucepan, combine beaten egg yolks with water, vinegar and melted butter.
  • Mix sugar and flour together and stir into egg mixture, mixing until lumps are gone.
  • Cook over low heat, stirring constantly until the mixture comes to a boil and cooks thick.
  • Add lemon extract and stir.
  • Let cool, then pour into baked cooled pie shell.
  • Chill until ready to serve.
