- 4 tablespoons butter
- 1 lb small red potato, CUT INTO 1/4 INCHS THICK SLICES
- 2 green onions, sliced
- 2 medium carrots, DICED
- 3 cups water
- 1⁄2 teaspoon salt
- 2 chicken bouillon cubes
- 1 1⁄2 cups long grain rice
- 1 (15 ounce) can red kidney beans, DRAINED
- 1 cup frozen peas
- 1⁄4 cup grated parmesan cheese
- 1⁄2 cup mozzarella cheese, SHREDDED
directions
- In 12 inch skillet over medium high heat, melt butter, add potatoes slices green onions and carrots stirring frequently until lightly browned, aproximately 5 minutes. add water, salt, pepper and chicken bouillon. over high heat bring to boil. add rice and heat to boiling. reduce heat to low and cover cooking for aprox 20 minutes until all liquid is absorbed and vegetables are tender. now stir in kidney beans, frozen peas, parmesan cheese, and mozzarella cheese. cook stirring gently until beans and peas are heated through.
