directions

  • Place butter in the freezer for 3 hours to freeze hard, then coarsely grate it. Stir flour and salt together in large bowl. Stir in grated butter and 13 Tablespoons of ice cold water and mix to a firm dough. Wrap in plastic wrap and leave to rest.
  • Mix veggies and meat with seasonings.
  • Preheat oven to 400 degrees.
  • Cut pastry into 4 and roll each out into an 8" circle. Cut round a plate to get the size. Brush edges with milk and then pile 1/4 of the filling into the center. Draw edges up to meet in the middle, seal and flute the seam of the pastry. Repeat with other 3.
  • Place on a baking sheet and brush with milk. Make airholes in each with a skewer. Cook towards the top of the oven for 20 minutes. Reduce heat to 350 and cook for another 40 minutes, until crisp and golden.
  • Serve warm.

  1. Thank you so much for posting this. It sounds just like a meat pie I got at a farmers' market in Freemantle, Australia. It was five years ago and I still remember how delicious it was.
