Tasty Banana Muffins

"This recipe is supposed to use Uncle Toby's Healthwise Breakfast Cereal, but anything similar would work, such as Sustain, Light & Tasty, or Just Right. I haven't tried it yet, so serving size is a guess."

  • Sift flour, add sugar.
  • In a large mixing bowl combine crushed cereal, egg, milk, bananas, yoghurt, and oil.
  • Let stand for 5 minutes or until cereal softens.
  • Add flour mixture stirring until combined.
  • Spoon mixture evenly into a muffin tray that has been lightly coated with cooking spray.Bake at 220C for 20 minutes or until browned.

  1. I made this muffin recipe for a weekend of geocaching with a friend and his kids. I used a 7 grain porridge cereal which may have not been the best choice as it overpowered everything and I had to add extra milk for the moisture it soaked up. When I make it again I may still use that cereal as it did provide a very nice texture and a very hearty muffin, but I'll half the quantity and pre-soak before adding. I'm not sure if it was the cereal but I added an extra banana and we still couldn't taste the banana at all. I may add some cut up apples and some spices such as cinnamon next time too to give it a bit of zing, just a taste preference. We did like them, just a bit bland. You'll be happy to know my friend polished off half of the dozen I brought with us :D. Thanks for posting Sara! Made for team Mischief Makers - ZWT, South Pacific.

So far I've found a lot of keepers, and will work at posting them on here. I'm passionate about a lot of things, mainly my kids, animals, and cooking. I won't even start on my peeves, we'll be here all night! lol
