Taco Tot Hotdish

"My MIL passed this recipe on to me that she received in a recipe exchange. We tried it, found it easy to make, cheap, and very delicious. Note: I can't remember the size of cans, nor the size of bag for the tater crowns. Just use the normal size for each item."

  • 1 (30 ounce) bag tater tots
  • 1 lb hamburger
  • 1 tablespoon taco seasoning
  • 1 (8 ounce) can Mexican-style corn, drained
  • 1 (8 ounce) can nacho cheese soup
  • 1 (8 ounce) package of shredded cheese

directions

  • Layer greased 9x13 pan with layer of crowns.
  • Brown hamburger; make taco meat with seasoning
  • Layer on top of crowns.
  • Sprinkle corn on top
  • Spread soup on top of corn.
  • Top with another layer of crowns.
  • Bake @ 400 degrees until crowns brown.
  • Top with shredded cheese-bake until melted.
  • Serve with whatever toppings you like -- sour cream, olives, salsa, jalapenos, etc.

  1. We love this! We sometimes use regular nacho cheese or bulk cheese sauce instead of the soup, and regular corn instead of Mexican. Don't forget the sour cream and salsa, and don't put the shredded cheese on until later as the instructions say or it will get too hard. I didn't cover it with foil, either.

I am wife to my hunky hubby Chris. I am also a stay at home, extended breasfeeding, extended rear facing, delay/anti vax, babywearing, homemade baby food making, and cloth diapering mama to the most beautiful and precious 21 month old little girl out there. My hubby has a passion for cooking and has always watched the cooking shows. I have picked up on that passion and done my best to experiment and have fun with cooking. We often cook together and that is one of the highlights of my day. I have learned that I prefer to bake over cook any day, but that if I want to keep a waistline, I must cook! I like to try cooking and baking fancy things. I have a huge desire to make my daughter a fancy one year old birthday cake. Just for the fun of it, I know she won't remember...but I will!
