Super Fudgy, Chewy Cocoa Brownies

- 1⁄2 cup cold salted butter
- 1 1⁄3 cups granulated sugar
- 1⁄4 cup packed dark brown sugar
- 3 large eggs
- 1 1⁄4 teaspoons pure vanilla extract
- 1⁄2 cup cocoa (I use Hershey's Special Dark. Other types of cocoa may be used, but may make the brownies very sweet)
- 2⁄3 cup all-purpose flour
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon espresso powder (optional, but does deepen the chocolate flavor)
- 1⁄2 cup bittersweet chocolate chips (optional)
directions
- Preheat oven to 350 degrees.
- Grease a 7"x11" pan and line with parchment paper. A 9" x 13" pan may also be used, but brownies will not be as thick and baking time may be reduced.
- In a large bowl, cream together butter, granulated sugar, and brown sugar.
- Add eggs and vanilla.
- Add cocoa, flour, salt, and espresso powder and mix until well blended.
- Stir in chocolate chips (optional).
- Place into preheated oven and bake until a toothpick inserted into the center comes out with only a few, moist crumbs. Appx. 30 minutes.

Made these brownies for my other half to take and share at a meeting, and although I thoroughly enjoy brownies, I am relying on what other said about these, because I'm not a fan of coffee in anything! I can happily say that these brownies were devoured quickly and much enjoyed! Definitely a recipe worth keeping around for those who like that one particular ingredient!
