  • 1 (16 1/3 ounce) can Pillsbury Grands refrigerated buttermilk biscuits
  • 3 tablespoons Dijon mustard
  • 8 ounces thinly sliced corned beef, chopped (from deli)
  • 12 cup shredded swiss cheese
  • 12 cup well-drained sauerkraut
  • 1 egg, beaten
  • thousand island dressing

  • Heat oven to 375°F.
  • Separate dough into 8 biscuits.
  • Press or roll each biscuit to form a 5 inch round circle.
  • Spread about 1 teaspoon Dijon mustard on each biscuit.
  • Place 1 ounce corned beef, 1 Tablespoon sauerkraut and 1 Tablespoon cheese in center of each biscuit.
  • Fold in half; seal edges.
  • Prick top with a fork to allow steam to escape.
  • Place on ungreased cookie sheet.
  • Brush tops with egg.
  • Bake at 375°F for 13-16 minutes or until golden brown.
  • Dip into thousand island dressing and enjoy!

  1. I changed the recipe and used 2 biscuits for 1 sandwich. I had a top and a bottom.Easier to seal and you could fill it a little more.I then ended up with 4 sandwichs. They were very good and will have them again. They would be great to have ready when friends come over.

  4. Really tasty, and really easy! Hit the spot on a chilly day. The kids were helping, so I'm not sure how accurate the amounts of stuffing were, but I thought it could use a little more sauerkraut, and my husband thought mixing up the middle would have been a little better. We'll do this again soon (perhaps with the leftover sauerkraut!) and try with other innards. Thanks for the yummy recipe!
     
  5. Wow oh Wow oh Wow....these stuffed reuben sandwiches are FAB-U-LOUS! We had company over this past Sunday (football) and had some people over for the game. Making this recipe was actually a last minute decision for me. But it was the best decision I could have made. The original recipe I had called for canned crescent rolls, however all I had were Grands. I did just a few things differently (because of necessity). First I rolled out the Grand Biscuits as you said. But I put a little bit of Thousand Island Dressing on each biscuit. Then I bought the little bags of corned beef (about 2.5 oz. each). The corned beef comes in extremely thin slices. I put two slices of the corned beef over the dressing, then added a smaller piece of swiss cheese. I rolled up the biscuits (jelly roll style) crimping the ends to make sure the cheese didn't escape. I brushed the top with a beaten egg, too. These roll ups came out browned and beautiful. The guys were just "Mmmmming" the whole time they ate. We dipped these in hot mustard. The reason I didn't use the sauerkraut is because when I went to open my can, it exploded. I didn't notice that the can was bulging! Can you say "Food Poisoning"!! I had to scrub the can opener and everything that had come in contact with the juices. Anyway, I plan on making these for our Christmas Eve party and will make some with sauerkraut and some without. This time I'll make sure my can is intact. Thanks for an absolutely wonderful recipe Jodiegirl!

I made this account back in 2001, when the site was called "Recipezaar". A lot has changed in my life since then. My kids are all grown and I try to eat a low-carb lifestyle now. Some of my older recipes were handed down from my grandmother. I hope you all enjoy them as much as I have. Current recipes that I post will mostly be low carb or keto.
