Weeknight Low-Carb Stuffed Bell Peppers

Weeknight Low-Carb Stuffed Bell Peppers created by lazyme

I have been making this recipe for 25 years but I have never written it down. I got the recipe from my best friends mother in law. I religiously made it exactly as she had given it to me. I ran into her a few years ago and told her how I had made her recipe all these years. She told me she never puts the same ingredients in twice. She just uses what she has on hand. LOL.

These were wonderful and so different than the usual stuffed peppers I make. My spouse raved about them! The addition of the bacon was a revelation. I served them on a bed of Mexican rice and it was perfectly satisfying and filling. I will use this again--often.

Yummy peppers. I only made 2 of these because my grand son said he didn't like stuffed peppers. He ate 3 out of the 4 halves that I made! lol. Needless to say.........these were a hit at my house. Thanks for sharing this great keeper, Lynn.

Tried this one last night, doubled the recipe as instructed and it was a hit with the family! I'm new to the cooking world as I'm learning to walk and talk again after a stroke, but so far, good. I used a custom blend of Montreal Steak Seasoning in lieu of salt and pepper. Great recipe for those who have to watch carb intake and the chile powder really does add just the right touch.

What an awesome recipe, I made it for my wife and daughter and they loved it. I was thinking my daughter would hem and haw and not want to eat it but she ate every bite of it.
