- 1 lb raw bacon, cut into 1 inch strips
- 8 ounces onions, diced
- 1 (15 ounce) can diced white potatoes
- 1 (15 ounce) can ranch style beans
- 2 (46 ounce) cans pinto beans
- 1 (10 ounce) can rotel
- 8 ounces medium salsa
- salt or pepper
directions
- Line 6-qt dutch oven with cut bacon strips. Salt & pepper to taste. Cook over medium-high heat to about 3/4 doneness.
- Add diced onion. Cook until translucent. (1-2 minutes).
- Add drained diced potatoes.
- Add Rotel and salsa.
- Add Ranch style beans.
- Add pinto beans.
- Salt & pepper to taste.
- Reduce to low heat.
- ** Top with an over-easy egg for a yummy breakfast treat!
