ingredients
- 1 1⁄2 cups flour
- 1⁄2 cup natural bran
- 1 tablespoon baking powder
- 1⁄4 teaspoon salt
- 1 teaspoon ground nutmeg
- 2 ripe bananas, peeled
- 2 eggs
- 1 cup brown sugar
- 1⁄2 cup vegetable oil
- 1 teaspoon vanilla extract
directions
- Preheat oven to 375°F.
- Whisk together the flour, bran, baking powder, salt and nutmeg.
- Mash the bananas and stir in the eggs, brown sugar, oil and vanilla.
- Mix well and add to the dry ingredients. Stir until well combined.
- Spoon the batter into a prepared muffin pan and bake until the tops are golden brown and a toothpick comes out clean when inserted, about 12-15 minutes.

If you're looking for a simple, delicious banana muffin, look no further. These are excellent! I did add 1/2 tsp cinnamon and 1/2 cup walnuts, as we're fans of both in our banana muffins/bread - this is a very flexible recipe.
