Simple Sausage Potato Bake

- 1 1⁄2 lbs russet potatoes, raw, peeled
- 1 lb raw turkey sausage links (or pork)
- 1 pint baby bella mushroom, quartered
- 2 cups Baby Spinach, raw
- 1 (15 ounce) jar garlic alfredo sauce
- 1⁄4 cup beef broth
- 3 garlic cloves, minced
- 2 cups shredded cheese (I use a 4-cheddar blend)
- paprika (optional)
directions
- Preheat oven to 350°F.
- Boil potatoes for 15 minutes. Drain and rinse in cold water to cool them enough to handle.
- Meanwhile, brown sausage links in pan on low-medium heat. Once sausage is cooked, cut it in to bite sized pieces and set aside.
- Cut cooled potatoes into half inch chunks.
- Prepare a 13 by 9 baking dish with nonstick cooking spray. Add in potatoes, sausage, mushrooms, spinach, and garlic.
- Pour jar of Alfredo sauce over mixture. Then add in beef broth and one cup of the cheese. Mix until well combined, spreading mixture out evenly in baking dish.
- Top mixture with remaining cup of cheese, Then sprinkle with paprika, if desired.
- Bake for 30 minutes. Enjoy!
