ingredients
- 2⁄3 cup canned pumpkin
- 1 egg white
- 2⁄3 cup water
- 1 spice cake mix
directions
- Preheat oven to 350 and line a muffin pan with cupcake papers.
- Mix all ingredients and spoon into papers 3/4 full.
- Bake 12-18 min or until a toothpick comes out clean.

These are absolutely the best pumpkin muffins I've ever made! Moist & flavorful. Wicked easy. I made some plain, and some with both chocolate chips and chopped pecans. Both were great, but even though I'm a dedicated chocoholic, I think I actually preferred them plain. Hmm, that can't be right. Better make another batch to test it out... BTW, my DH and 2 friends loved them too!
