directions

  • 1. In a skillet, cook the ground beef, adding seasoning salt and pepper, until completely cooked. Drain off the juices and place the beef in a medium-sized bowl.
  • 2. Pour the two cheeses and onions into the bowl with the cooked hamburger meat and thoroughly mix. Place an equal amount of the cheeseburger mixture on each tortilla.
  • 3. Fold each tortilla over to create a "half moon" and press down lightly.
  • 4. Coat the skillet or griddle with cooking spray and warm to a medium heat. Lightly brown each quesadilla for two to three minutes on each side until the cheese melts and the tortillas are crisp.
  • 5. Remove quesadillas from the pan and cut each into 3 wedges. Serve with your favorite cheeseburger fixings like lettuce, tomatoes and pickles.
  • Hints:

  • 1. Substitute extra lean ground beef, chicken or turkey for the regular ground beef called for above to make these quesadillas leaner.
  • 2. If you are looking to reduce the fat and cholesterol in your family’s diet, choose a skim milk or fat free variety of cheese.

  4. Combined this recipe with one my son made from another site for burritos. First I used vegetarian crumbles instead of ground beef because we're vegetarians, next I cooked the crumbles with the onions and added vegetarian refried beans and sour cream. I spread the mixture on the tortilla and put mexican taco style cheese on top and then folded and put in skillet cooking on both sides. Son liked it better than the burritos he'd made (which were very good) and I like that I could customize each quesadilla (I added avacado and cilantro to mine).Good basic recipe that you can customize
