ingredients
- 1 lb pork sausage
- 1 cup shredded cheddar cheese
- 10 beaten eggs
- 2 tablespoons milk
- salt
- pepper
directions
- Spray muffin pan with pam. Brown and drain sausage. Place 1 or 2 tablespoon sausage in muffin tins. Top with 2 tablespoon cheese (more or less to taste). Pour beaten eggs in each tin. Bake 350 for 10 to 12 minutes. Until eggs are done.

Very good and super easy to make.This is called a casserole but the instructions are for muffins. I got 13 regular sized muffins from the recipe. Milk is listed as one of the ingredients but it isn't mentioned in the instructions so I added it to the beaten eggs. I also mixed the cheese into the eggs with the salt and pepper and then spooned the mixture over the sausage. Mine took almost 20 minutes but ovens vary so this didn't surprise me. This is an excellent recipe for anyone following a low carb diet. I will make it again but I think I'll bake it in a pan and cut into squares instead of making muffins.
