  • Fry potatoes in 3 T olive oil until browned and tender.
  • Remove and keep warm.
  • Add remaining oil to skillet, add shrimp.
  • Cook for 2 minutes; add remaining ingredients and saute for 3 minutes.
  • Return potatoes and mix well.

  1. So I wasn't very sure about the combo at first. I took the other lady's idea, and switched the parsley for cilantro, and I also added cabbage, we're an Irish family..lol..the lemon was awesome to bring out the taste of the cilantro..it worked perfectly and they loved it. I will definitely make this again!!

  2. Yummy! And very quick & easy. The lemon gave it a nice fresh taste. The only chnage I made was to substitute diced jalapenos for the red pepper flakes and at the end added a handful of baby spinach.
     
  3. I was browsing through recipes looking for something different to try when I came across this recipe. Other than reducing the recipe to 2 servings I made this as written. It was easy to put together and was quite tasty. Thanks for sharing.

  5. 2/9/08 Just ate this for dinner. My 4 year olds LOVED it. I reduced the amount of Oil to 2 tablespoons. I cooked the potatoes first in 2 table spoons of Olive Oil in a Non Stick Pan and I used the remaining oil in the pan to cook the shrimp etc. I also microwaved the potatoes after the saute for 2 mins on high to be sure they were cooked through. this is a definite keeper. Thank you for posting

Tweaks

  1. First, I want to say that I LOVED this. It was quick and easy to make and I was able to use one pan. The only tweaks I made were to add a teaspoon of both Smoked Paprika and Ginger with the spices and a tablespoon of Herbed Garlic saute butter to the oil for the shrimp. Everyone just loved it and that's not always possible in my house. LOL
     
  2. Very easy to prepare dish. I par cooked the potatoes in the microwave and fried them in half the oil. I sauteed the shrimp in a bit of butter instead of the oil. As with another reviewer, I added the zest of the lemon I was juicing. Lemons are expensive here and don't want to let them go to waste just for the juice. Do not like heat, so left the peppers out.:)

  4. This was just great. I have never had the combination of shrimp and potatoes in the same dish and this turned out to be a wonderful combination. My only substitutions were lime juice instead of lemon and cayenne pepper instead of red pepper flakes. Thank you for a terrific recipe!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
