Pork With Three Onions

- 1⁄3 cup teriyaki sauce
- 3 garlic cloves, minced
- 3⁄4 lb pork tenderloin
- 2 tablespoons peanut oil or 2 tablespoons vegetable oil, divided
- 1 small red onion, cut into thin slices
- 1 small yellow onion, cut into thin slices
- 1 teaspoon sugar
- 1 teaspoon cornstarch
- 2 green onions, cut into 1-inch pieces
directions
- Combine teriyaki sauce and garlic in a shallow bowl. Cut pork across the grain into 1/4-inch slices; cut each slice in half. Toss pork with teriyaki mixture. Marinate at room temperature 15-20 minutes.
- Heat large skillet over medium-high heat. Add 1 tablespoon oil; heat until hot. Drain pork; reserve marinade. Stir-fry pork 3 minutes or until no longer pink. Remove and set aside.
- Heat remaining 1 tablespoon oil in skillet; add red and yellow onions. Reduce heat to medium. Cook 6-7 minutes until onions are softened, stirring occasionally. Sprinkle with sugar; cook 1 minute more.
- Blend reserved marinade into cornstarch in cup until smooth. Stir into skillet. Stir-fry 1 minute or until sauce boils and thickens.
- Return pork along with any accumulated juices to skillet; heat through. Stir in greens onions and serve.

Made for Zaar Chef Alphabet Soup Game (Feb '08 - Jan '09). My oldest DS came home for dinner tonight and asked if he could help me with dinner and I said, "Sure!" and he ended up making this dish for us. It was absolutely wonderul and according to him incredibley easy. We served this with brown rice and broccoli. Most definitely a keeper and we wlll be making this again. And, by the way, the recipe doubles very easily. Thanks for posting this, TasteTester!
