- 1⁄4 cup honey
- 3 tablespoons cider vinegar
- 2 tablespoons olive oil
- 1 small shallot, minced
- 2 teaspoons Dijon mustard
- 1 teaspoon poppy seed
directions
- Whisk together or process in a food processor until smooth.

The poppy seeds and whole mustard seeds (I used wholegrain mustard) give an interesting crunch, which is lovely, and the dressing tasted great poured over hot, steamed broccoli. I think it would work well as an unusual dressing for potato salad, too. Perhaps it was the individual character of my cider vinegar, but I found the dressing to be very vinegary and a little bit harsh. If I were to make it again, I would use less vinegar (say, 1 to 2 tbsp) and more olive oil (say, 3 tbsp). An interesting recipe, which is worth tweaking according to personal taste.
