Poorhouse Pancakes

- Heat pan (ideally a 9 inch skillet) with almost 1/4 inch of oil in the bottom.
- Mix flour & egg.
- Add milk. Batter should be pretty runny.
- Add sugar to taste.
- Pour batter into hot skillet. If it needs a bit of help, spread it with a spoon.
- As it cooks, cut slits with a spatula, especially to pop bubbles. If your skillet doesn't heat evenly, rotate the pancake so it will cook evenly.
- Peek underneath to see when it's golden brown & ready to flip. Flip and cook until the second side is done.
- Serve as is, no need to top it.
