Peppermint Chocolate Blast

ingredients
- 1 tablespoon instant coffee crystals
- 1⁄2 cup ice cube
- 1 teaspoon cocoa powder
- 1⁄2 cup light soymilk
- 2 (1 g) packets sugar substitute
- 1⁄4 teaspoon peppermint extract
- 1⁄4 teaspoon french vanilla extract
directions
- Put ice in blender and crush.
- Mix together the milk, sugar, and extracts and add to blender.
- Add coffee crystals and cocoa powder to blender.
- Blend for 30 to 60 seconds until combined.

Frosty, minty and chocolatey! I just added one more sugar packet. DH says, "Mmmmmm ... it's good. Taste's like an Andes Mint candy", I guess that makes this a success!! My blender is a piece, so some of my ice cubes were a little large. A local super market sells what is called "pebble ice" - I think I'll pick up a bag of that next time, making this perfect ... we loved it! Another recipe for my coffee cookbook. Thanks ashlynn08 :)

This did make a fairly thick frosty drink, but we found it to be overwhelmingly minty, and slightly grainy from the coffee granules. If I make this again, I will reduce the mint extract to the merest drop, and I will pulverize the coffee and cocoa and sugar sub together to a fine powder before adding.
