- 2 cups self-rising cornmeal
- 3⁄4 cup milk or 3/4 cup buttermilk
- 1⁄4 cup vegetable oil
- 1 egg
- 2 tablespoons sugar, or
- 3 (1 g) packets sugar substitute
- 1 cup chopped green onion, and tops
- 3⁄4 cup sour cream
directions
- Preheat 10 inch cast iron skillet and 1 stick margarine in a 425 °F oven.
- Combine all ingredients together just until blended. Pour mixture into the preheated skillet.
- Bake for 30-35 minutes until knife inserted in center comes out clean. Invert onto a plate. Slice and serve hot. Makes 8 servings.
