Old Fashioned Baked Apples

ingredients
- 4 baking apples (like Spy or Golden Delicious)
- 1⁄4 1/4 cup diced candied ginger or 1/4 cup diced dried apricot
- 1⁄4 cup brown sugar or 1/4 cup maple sugar
- 1⁄2 teaspoon cinnamon
- 1 tablespoon cold butter, cut into 4
- 1⁄4 cup maple syrup or 1/4 cup honey
- 1⁄4 cup apple juice or 1/4 cup water
directions
- Remove the core of the apples with an apple corer or small knife, leaving about 1/2" at the base.
- Peel the top one third with a vegetable peeler or sharp knife.
- Place apples in an 8" square baking dish or in another ovenproof pan that holds them snugly.
- Place 1 tbsp.
- raisins in each apple.
- In a small bowl combine brown sugar with cinnamon and add 1 tbsp mixture to each apple.
- Place 1 small piece of butter in each apple.
- Combine syrup with apple juice in a small bowl and pour over and around apples.
- Bake in a preheated 350F oven for 45-55 minutes or until apples are very tender.
- Baste a few times during baking.

My mum used to bake apples, she used a tin baking tray, she cored them completely and stuffed sultanas and sugar in the middle. Not sure if she put any water in the dish but they were always squishy and delicious in the bottom, not still in the apple shape at all, a as bd quite brown on top. I’ve tried to replicate them but can’t make them, they’re always quite firm and still in the apple form.

Perfect fall dessert which we enjoyed. Instead of the apple juice I used cider and used only raisins for the filling the apples but next time I may try to fill them with dates and raisins. I only made three apples using two golden delicious and a red apple for the last one. Thanks for sharing! We will be having this often!

On May 1, 2008 my husband and I started a new adventure. We'll be living in a 37 foot RV while our new home is under construction. Its out in the country on a dead end dirt road with lots of trees. For the next 4 months or so, most meals will be cooked on the BBQ and life will be full of challenges!
We love spending quality time with our friends & family - especially the grandkids!! The photo is 4 generations - my 84 year old mother, myself, my daughter & my youngest granddaughter - taken at the end of 2006.
