- 1 lb potato, peeled and cut into chunks
- 1 cup single cream
- 3 teaspoons English mustard
- 1 tablespoon butter
- 1 egg
directions
- Simmer the potatoes in a pan of water for 20 minutes.
- drain well, return to the pan over low heat and shake until they have steamed dry.
- mash off the heat, add cream, mustard, butter, egg and lots of seasoning and continue to mash until the potatoes are smooth and fluffy. Taste and adjust the seasoning of necessary.
