Mom's Spinach Salad

"This is the salad that my mom makes every time I come home, and is the only way to get my brother to eat spinach!"

• Yields: 1 salad bowl
• Serves: 3-4

ingredients

• 10 ounces baby spinach leaves
• 1⁄4 cup craisins
• 2 hard-boiled eggs, diced
• 1 apple, cut into slices
• 1⁄4 cup roasted walnut

directions

1. Hard boil two eggs.
2. Peel eggs and dice into small pieces.
3. Slice apple into thin wedges.
4. Combine spinach, egg, craisins, apple and walnuts in a bowl.
5. Toss salad with your favorite dressing.
